cup coconut sugar

cup lemon juice

tsp vanilla extract

cup applesauce

tbsp baking powder

tsp baking soda

cup powdered sugar

1: Preheat your oven to 350 degrees. 2: Grease a bundt pan with a neutral oil and set aside. 3: Make vegan buttermilk by combining the vinegar and plant milk, set aside for about 10 mins. 4: In a large bowl, add the butter and coconut sugar, cream together until fully combined. 5: Add in the lemon zest, lemon juice, buttermilk, and vanilla, and mix together again. 6: Add in applesauce in four parts, beating just until combined after each. 7: Sift in your flour and mix again until combined. 8: Add in baking powder, baking soda, and salt, mix until combined. 9: Pour lemon pound cake mixture into the greased pan, spread out evenly and bake for 50-60 mins. 10: Let cool, put over glaze and enjoy.View original recipe
