1: Bring a pot of water to a boil and salt liberally. 2: Add pasta and cook to desired texture. 3: Meanwhile, in a medium saucepan add a little olive oil and sauté the mushrooms, onion, and peppers. 4: Add a little salt to the mushrooms immediately to extract more water during cooking. 5: Once veggies have been sautéed, add in the sauce and lentils. 6: Add in seasonings and stir to combine, then let simmer while pasta finishes. 7: Meanwhile, make the cashew parmesan by adding all ingredients to a food processor and pulse until fine. 8: Strain the pasta, coat noodles in a little olive oil, and serve with sauce topped with the 'parmesan' and enjoy.View original recipe
