What you need

fl oz lemon juice
tsp dried oregano

tsp garlic powder

tsp red chili flakes

cup chickpea flour

tsp pepper

tbsp hemp seeds

tsp salt

cup water

clove garlic clove

tbsp olive oil

cup flax seed meal

fl oz tomato sauce
Instructions
1: Lay lion's mane mushroom in a hot skillet and let sear on each side for 3-5 minutes. 2: Sprinkle salt and pepper to draw out moisture, pressing down gradually to release water content, then repeat on each side. 3: Set the mushroom aside to cool. 4: Load all ingredients for the pesto into a blender and process until combined, then taste and adjust seasoning as needed. 5: When the mushroom is cool to touch, coat it in wet batter, then seasoned dry batter, and finally breadcrumbs. 6: Shallow fry in avocado oil until crispy and golden on each side. 7: Assemble the sandwich optionally with plant-based cheese and enjoy.View original recipe
