What you need

cup water

tbsp avocado oil

tbsp coconut aminos

tbsp beet

tbsp thyme

tbsp granulated garlic

tbsp granulated onion

tbsp black pepper

cup vegan mayonnaise

pinch salt

tbsp red wine vinegar

cup fresh parsley

cup fresh cilantro

tsp salt

tsp pepper

tsp red pepper flake
Instructions
1: Sear and press lion's mane mushrooms in a pan over medium-high heat until they develop color on both sides. 2: Set the mushrooms aside. 3: In a bowl, combine boiling water, avocado oil, coconut aminos (or soy sauce), beet powder, thyme, granulated garlic, granulated onion, and black pepper to make the marinade. Whisk to combine. 4: Pour the marinade over the mushrooms in a plastic bag and set aside for at least 15 minutes. 5: Meanwhile, combine all ingredients for chimichurri and garlic mayo in separate bowls. 6: Once marinated, sear the mushrooms again to cook them through and baste with vegan butter, fresh thyme, and garlic cloves. 7: Remove from the pan once nicely cooked through, slice, assemble the sandwich, and enjoy.View original recipe
