What you need

cup fresh cilantro

cup chickpea flour

bunch arugula
bunch sage

tsp garlic powder

tsp paprika

cup fresh parsley

tbsp red wine vinegar

tbsp salt

tbsp pepper

bunch thyme

cup olive oil

bunch rosemary

clove garlic clove

tsp red pepper flake
Instructions
1: Sear and press the lions mane mushrooms in a pan over medium-high heat for about 3 minutes, lightly oiled. 2: Let it develop color on both sides and press to desired thickness, cook through and baste with vegan butter and fresh herbs. 3: Remove from heat and let rest on the side. 4: Chop and add all chimichurri ingredients in a bowl, mix and set aside. 5: Slice shallots thin, toss in seasoned flour mix and fry over medium heat for about 1-2 minutes until golden and crispy. 6: Assemble sandwich with seared mushrooms, chimichurri, crispy shallots, and arugula, and enjoy.View original recipe
