What you need

can red beans

cup coconut

cup ketchup

tsp salt

tsp pepper

tsp garlic powder

tsp onion powder

tsp dried thyme

tsp allspice

tsp cinnamon

tsp cayenne

tbsp vegan mayonnaise

tsp red wine vinegar

pinch salt

pinch pepper

tbsp curry powder
Instructions
1: Sauté aromatics with the mushrooms roughly chopped until onions and peppers are translucent and mushrooms have released all moisture. 2: Mash red beans in a large bowl with a fork until mixture resembles mashed potatoes with a few beans still intact. 3: Blend 1/4 cup of oats in food processor until granular and spices are incorporated. 4: Mix mashed beans and sautéed vegetables in a mixing bowl along with blended spice flour. 5: Add 1/4 cup of ketchup to the mixture and mix until all combined, forming a patty. 6: Add more blended oats or mixture to adjust wetness or dryness, and pan fry until crisp, browned, and cooked through. 7: Add all slaw ingredients and mix to combine. 8: Dress with toppings of choice and enjoy!View original recipe
