1: Slice carrots in half lengthwise. 2: Place on parchment-lined baking tray and coat in oil, salt, and pepper. 3: Roast at 400ºF for 35 minutes. 4: For pesto, blanch carrot tops in boiling water for 2 minutes, then plunge in ice water. 5: Squeeze out excess water. 6: Place carrot tops in a blender along with all other pesto ingredients except oil. 7: Blend until roughly combined, then stream in oil until smooth. 8: Serve and enjoy.View original recipe
