Instructions
1: Preheat oven to 375°F. 2: Prep the 'cheese' sauce by chopping garlic, onion, rosemary, and sage. 3: Add plant milk, cashews, and nutritional yeast to a blender and process until combined. Set aside. 4: Sweat garlic and onion in a separate pan. 5: Strain off the blended mixture into the pan and add the coconut milk. 6: Season with salt, pepper, and the rest of the listed seasonings, then add in the vegan butter. 7: Simmer until the sauce coats the back of a spoon and leaves a trail when a finger is run through it. 8: Slice potatoes and line them in an oiled baking dish. 9: Bake for 45 minutes covered, then uncover and bake for 20 more minutes. 10: Let cool and enjoy.View original recipe
