What you need

cup hemp milk

tbsp apple cider vinegar

tbsp ground flaxseed

tbsp water

tbsp vegan buttery spread
tbsp arrowroot powder

tbsp coconut sugar

tbsp baking powder

tsp cinnamon
Instructions
1: Mix the ground flax seed and water and set aside. 2: Mix the apple cider vinegar and hemp milk and set aside for at least 5-10 minutes. 3: Combine the wet ingredients in a mixing bowl along with melted vegan butter. 4: In a separate large bowl, combine all dry ingredients and whisk to combine. 5: Mix wet with dry ingredients, folding gently to avoid overmixing; some lumps are okay. 6: Optionally, let the batter sit for a few minutes to activate baking powder for fluffier pancakes. 7: Lightly oil a cake or cookie mold and place it in the pan with enough batter to fill the mold. 8: Cook for about 3-4 minutes on one side, covered. 9: Flip and cook another 2-3 minutes.
