tbsp coconut aminos

tbsp tomato paste

tbsp fresh rosemary

cup vegetable broth

tbsp fresh sage

can jackfruit

tsp salt

tsp black pepper

cup vegan margarine

pinch fine sea salt

Instructions
1: Preheat oven to 375ºF. 2: Get a medium pot on boil for sweet potatoes. 3: Peel and chop sweet potatoes, boil until fork tender. 4: Chop all aromatics and herbs. 5: In a medium saucepan, sauté all aromatics and herbs until slightly soft. 6: Make a little well in the middle of the pan and add tomato paste to cook out for a minute or two, then combine with sautéed aromatics and jackfruit. 7: Deglaze pan with coconut aminos and veggie broth, then set aside on low heat. 8: Meanwhile, strain and mash sweet potatoes, folding in salt, pepper, vegan butter, plant milk, and nutritional yeast until fully combined. 9: In a baking dish, layer the jackfruit mixture on the bottom followed by sweet potatoes on top. 10: Bake for 30-35 minutes, then serve and enjoy.View original recipe
