Instructions
1: Drain and rinse your jackfruit, then squeeze out as much liquid as possible with a clean kitchen towel. 2: Tear jackfruit into shreds and roast at 350ºF for 15 minutes with a drizzle of oil, salt, and pepper. 3: Drain and rinse your chickpeas but keep the liquid that comes in the can (aquafaba). 4: Mash chickpeas in a large mixing bowl, then add roasted jackfruit, pumpkin seed tofu, spices, aquafaba, and flour. 5: Mix until well combined, then form your nuggets. 6: Lay nuggets on a tray and freeze for 30 minutes. 7: Coat nuggets in seasoned flour, then aquafaba, and back in the flour to fully dredge. 8: Fry on medium heat for 3-5 minutes total or until golden and crispy. 9: Serve and enjoy.View original recipe
